Dear sweet mother of excess. Dear, dear sweet excess. Seriously, this was one recipe I looked at and thought to myself - "And Dorie remains thin how?" Ice cream, chocolate, butter, and 8 eggs!!! Needless to say, this was a dessert destined either for work, miniaturization, or the boyfriend. Since frozen does not work for work and the boyfriend love love loves ice cream, you have to guess which way I went.
Originally, I thought that I could combine the mini-me'ing and the gifting of it to the boyfriend, but alas he wanted the whole thing. The whole thing. Be still my arteries. However, there needed to be some changes to make it more palatable to him. Namely, the subbing of mint and chocolate for raspberries.
So that's what came to be - my singlehanded attempt to give the boyfriend an over-the-top, artery-clogging treat. Mint chocolate chip on the bottom, vanilla bean on the top, and loads of chocolate in the middle. Given my aversion to mint and chocolate together, I was able to restrain myself from trying this, but the boyfriend gave it two thumbs up. Actually, shockingly, the first words out of his mouth were that it was lighter than the chocolate malted layer cake that I made for his birthday, and therefore would be easier to eat. LIGHTER?!? My expression must have been priceless.
Other comments were mostly that the chocolate layer was basically like fudge - it melted very quickly though, so eat quickly! Assembling was a snap, but I did suggest to the other TWD'ers to definitely let it sit in the freezer for at least the 30 min called for in the recipe. I used cheapo ice cream, which made slicing it easier, but heating a knife under hot running water made slicing neat pieces much smoother. Also, my favorite part about making this? As I was taking pictures, I looked over at the torte and just saw these ice crystals forming - beautiful.
