
I was so excited when I saw the Bread Baking Babes' challenge this month - pitas! I'd never made pitas before, and I was eager to see if I could actually get them to puff. Since I've been too lazy / had too little time to take part in any of the previous Bread Baking Buddies challenges, I decided that this one was going to be my first.
Every comment I read was right - they were easy to mix up and quick to bake. What they didn't say, however, was that my apartment was going to reach 90 degrees by the time I had finished baking them!!! I was standing there sweating as I rolled out each of them, and I only made half the recipe! Blech. Luckily, I did get about half of my half batch to puff, and it seemed like the ones I rolled out less thinly were the ones that puffed, whereas the ones that I accidentally stretched thinner as I put them on the baking sheet were the ones that stayed flat.
Now that I have managed to get pitas to puff, I realize there are so many things I can do with them - change up flours, add seeds or spices or herbs on the inside and outside, big pitas, little pitas, the possibilities are endless! And that doesn't even come close to what I can fill them with - salads, sandwiches, chutneys, dipped in hummus or baba ganoush or a fresh tomato salsa.
I should make certain to thank Ilva of Lucullian Delights for choosing this bread of many possibilities, but, well... Excuse me, I think I need to go bake again...

Those look great! I've made pitas once, but it's been a long time. I really need to try it again.
I'm so glad you decided to join us this month! Those pitas look really good and you are right, you can shove just about any goodie you can think of in the pocket.
I used the ones that didn't puff as "toast" in the morning.

I used my flat ones in Fattoush Salad. Now, it's one reason I hope for half flat and half pockets!
When I look at other recipes for pita, some aimed for pockets and some aimed for flat.

I love pita sandwiches , but have never baked one,here in India its rare that bread is baked at home and eaten its usually purchased from bakeries.
we make our own whole wheat roti for everyday meals but if i get the ingredients i would love to make these pitas
