TWD: Mini Pumpkin Muffins


Aww, don't they look so cute and wee? (And isn't wee such a wonderful word?) Such adorable little bites of fall, chock full of raisins and nuts and seeds and pumpkin. Given that I've been on a pumpkin baking binge, these came at just the right time - I consistently have pumpkin in my pantry during October-December. Although a friend (rather impertinently, in my opinion) mentioned that pumpkin puree did exist outside of those three months and that I didn't need to fit all of my pumpkin baking and enjoyment into one span of time. Bah, what's the fun in that? I look forward to pumpkin pies, pumpkin cakes, pumpkin soups all year long!


The only problem? Well, I had to bake these at the boyfriend's. And he has no baking pans. At least, no fun ones. And definitely no muffin pans. Oh yeah, and there's no way that he has raisins, nuts, sunflower seeds, and various fall-like spices in his pantry, let alone pumpkin puree. Lucky for me, he was willing to go out with a shopping list of things I needed to bake in the couple of days I was there (I have priorities people). So I brought my pan (and electric mixer and various other ingredients) and showed up at his apartment, which had a stack of ingredients on his kitchen table for me. Aren't I just the luckiest? (And am I weird for having hauled my stand mixer 1.75 hrs away just so I could make bread?)


Consider that I wasn't even going to be giving him any of these, and I think you'd agree that he went above and beyond the call of duty. I was going to pack them away and take them into work for the operators who have been entertaining me these past few weeks on night shift. There's nothing like mini pumpkin muffins to make a night go faster, right? Oh yeah, and one other thing - I sorta kinda maybe took the rest of the pumpkin back with me to make cookies for them too. I know, he's a saint isn't he?


One thing I hadn't considered though was this: one normal sized batch of normal sized muffins? Yeah, guess how many of these cute, wee little suckers I ended up with. 5 dozen. Seriously, it was a mountain of mini muffins. And sprinkling those sunflower seeds on them? That gets a little old when you have to do it 60 times. Well, I forgot on one batch, sosueme. That still makes 48 times (I can do maths so well, can't I?)


So thank you to Kelly of Sounding My Barbaric Gulp (seriously funniest blog name ever) for picking something with which I could ingratiate myself to the ravening hordes out on the plant floor. These were cheaper, tastier, and healthier than the alternative - pizza :)

Last Week: Lenox Almond Biscotti (I swear, I haven't forgotten about the other kinds I made)
Next Week: Chocolate Cupcakes (because Clara would pick something else? the horror!)

I would think people would have been totally excited with these for treats!
With all 60 of these surely the boy friend got one or two!

I, too, try and cram all my pumpkin cooking into these last 3 months! I bake a ton of pumpkins and then have puree overflowing out of my freezer! :)

Minis! I love mini anything. They are time consuming aren't they. I have 4 mini muffin pans because I got tired of rotating 2!
Great man you have there. I think that he had best stock up on the appliances while he is feeling indulgent!
Wonderful treats, lucky night shift. Reasonably healthy too.
ps - I am with you - pumpkin in June is just wrong.

Oh, I think "will he go to the grocery for me to obtain random odd ingredients?" is a great test of a relationship. I think you've got a keeper there! I know that I love my hubs even more now that I know that he will make a special stop at the grocery for me to pick up saffron threads. Your muffins look beautiful! I made 12 minis out of my multiple batches, and wish that I did more of them mini. I'm glad these were a hit!

NO WAY. You hauled your mixer?? I love to bake, but I'm not sure I'd even do that! Dedication, my friend. And mini-muffins have almost no calories, so you're in good shape there. I should've done that. :)

It's only weird to haul your mixer if it was in the passenger seat with a seatbelt on, or worse, in a child safety seat in the back.

Cute muffins... and what? You couldn't have left your boyfriend with a batch? Especially after he went to all that effort...

Wee - reminds me of Scotland :-) And your mini muffins are adorable! Lucky plant floor guys - my husband is an engineer, but I hate to say I've only sent stuff in with him once and that was because his department (other engineers) was having a holiday potluck. Hmmmm, I may need to work on the whole generosity-thing rather than hording all these baked goodies for myself (well, the kids too). Thanks for inspiring me to do better :-)

I liked the minis with this recipe. 5 dozen is quite a haul, too! And I agree, this is THE TIME of year for pumpkin. It's just not right before the cool weather comes in.

Oh, those are very cute indeed and wow does that recipe make a lot of minis! And, yes, the boyfriend is a SAINT...you should make an honest man out of him soon. LOL. You didn't give him ANY? Love the thought of you hauling that mixer around, too fun!

I think the fun of squeezing in all your pumpkin baking in a three month time frame is it leaves you something to look forward to. And who can really eat pumpkin anything in July? I mean really! Great job on your mini's!

I'm always surprised, too, at how many minis you can get out of a regular batch. You boyfriend sounds sweet and I don't think it's weird to bring your KA. I probably would have buckled mine into the front seat.

Aww, look at those cute minis! And your boyfriend sounds like an angel. Pumpkin baked goods are yummy any time of year, but they take on a whole new significance in autumn!! I've been trying to resist that cookie recipe...

Cute, cute, cute! I could never talk my boyfriend into going to pick up ingredients for me - he would be too worried about bringing back the wrong thing! Dragging your stand mixer was not weird at all. I'd do the same thing!

5 dozen wee little muffins...they look great. I feel a tad sorry for the boyfriend! I agree about non-seasonal pumpkin usage. I stocked up on fresh cranberries for the freezer last November, thinking I'd use them all year long...they're still in the freezer.

Besides the fact that your minis look 'big' with flavor they are cute as the dickens. Great job. Now multipy 48 times the number of seeds on each muffin and see how you feel!!! You do have a saint for a boyfriend. ANd he didn't get any. Pooh!!! Love reading your blog. ONe of the few I actually read all the way through.

You are definitely not strange for bringing your mixer with you! I once walked my kitchenaid over to my neighbors because she didn't have one and we wanted to make some cookies at her place. Talk about heavy, by the time I arrived at her house, I thought my arms were going to fall off.

I'm with you. I love pumpkin stuff and I always have cans of pumpkin in the pantry, all year round, just in case. I buy it in the fall when it's on sale.

That's the down side of mini-muffins -- there are so many of them!! They look delicious.

5 dozen?? YIKES! I'll have to write that down in my cookbook so when I get a hankering to bake mini muffins it will remind me to 1/4 the recipe. HAHA. Thanks for doing the legwork for me. BTW about my cupcake pick next week... I was totally forced. Totally. ;)

Very Fun Post and yes you have a sweetie for your boyfriend. Although, he probably thinks you are the sweetest with all the sweets you bake. Your photos look really warm and welcoming for fall, that cram packed pumpkin time of year, for pumpkin lovers.

What a great guy you have. I hope that with 5 dozen muffins, you gave him a few for all his effort. I had started to make mini-muffins, but I can't find the pan. So since I made 6 mini-loaves, and that would be 10 of your mini-muffins each.

Yeah, I've done that before, bake minis instead of regular sized and gotten WAY too many muffins. But you shared so 5 dozen was just the right amount, right? :)

I know what you mean - I know the canned pumpkin puree is avaialable year round, yet I only bake with it in the fall - it's just not the same any other time of year!
