TWD: Corn and Pepper Muffins


So while I was on my daily run, something occurred to me. Well actually, what occurred to me is what I think about while I'm running. And what I tend to watch when I run on a treadmill and there's a tv in front of me (seriously, best invention ever when you have to train for a half marathon indoors).

Food. Food Network. Baking. Dinner

I know, counterintuitive, isn't it? I mean, I'm running for several reasons: my mental sanity, my physique, and because I have nothing better to do. So the last one isn't quite true, or true at all, but it's the second one that really matters in this discussion. I run so that I can eat whatever the heck I want. Seconds? I'm there. Dessert? There's always room for dessert. Chocolate as a 10a work break? Totally kosher. But when I run for extended periods of time, all I'm thinking about is what I want to bake or cook next. Today, it was peanut butter cup brownies. Tomorrow, it might be gianduja bites.


All this makes me wonder if I just stopped running, if I'd stop baking too. And eating so much. Unfortunately, I've discovered what happens when I don't run - I go insane. I become distracted, frustrated, and weepy with mood swings. I guess I know what I'll need to do when I get into the latter phases of my life; I will just need to run my hot flashes away. Well, that doesn't make sense at all, but we'll get to that problem later.

Oh, and that brings me to another thought that I had while I was cooling down from my run. I was ecstatic when I pulled my second batch of these corn and pepper mini muffins (chosen by Rebecca) out of the oven because I had gotten that coveted domed muffin top. Which made me think later on (after eating a handful of them for lunch) that it was sort of mean of muffins. Muffin-topped muffins leading to muffin tops. Not very nice, are they?


As revenge, I think I'll just have to eat all of them. Because really, my thought processes are always completely rational. Perhaps I'll even up the revenge factor by subjecting them to the oven one more time. With pepper jack cheese on them.

I know, evil, right?

Oh no, running hot flashes away is really the way to do it. My co-worker swears by it. She also likes to let us all know when said hot flashes are occurring. Nice lady. I can't wait to grow up. :)

Oh, and those muffins are super mini and super good looking. I like that whole re-baking with cheese thing.

Your muffins look fantastic! Half marathon eh? I admire you for that. I have never been able to get into running myself, but I am totally in to muffins, probably why I sport a pretty healthy muffin top myself. These were really tasty muffins and I'm with you on the cheese thing. I was almost tempted this time, but have saved it for next.

Your muffins are so handsome! Lovin' that domed top. I wish I had the energy to run - I try and skimp on some things so that I can eat my own baking. Not exactly a healhty philosophy, but i gets me by until I go home to my Mum who feeds me big!

Oh, adding the spicy jack cheese would be pure genius! I'm no runner, but I know what you mean about the exercising = dessert. Good luck on that half marathon training!

I run to eat too. Well, I like it for other reasons but anytime I'm on a long run you can bet I'm pondering what I'm going to eat to reward myself. I think that I would totally freak some people out if I admitted that but from your post I think that you'll understand.

I love the mini muffins. I wish I had a mini muffin pan. I'm tempted to get one but I'm just not sure that there's room in the kitchen!

I run so I can eat whatever I want too! Good luck with your training. I'm trying to train for a spring marathon but it keeps snowing! glad you liked the muffins

Well, I am not a runner, but I do love to walk. My daughter runs enough for both of us - does that count on the calories, hummmmm!!!

Those look delicious! The only thing that is saving me from being a zillion pounds is exercise. And I, too, think a lot about food while doing it.

Pepper Jack cheese... Yeah! good idea. I skipped this week but will try this recipe. I too have found that I go insane if I don't exercise regularly, although I couldn't run a mile! I am not a runner, so I admire your skills!

I fully agree with you! If I don't run (or work out) for more than 3 days, I go NUTS! Unfortunately, even though I work out, I STILL can't eat whatever I want! So I just have little bites. BUT I always feel like a bad person watching Food Network or reading Gourmet magazine at the gym! I feel like people must be judging me because I'm busting my a-- and drooling over braised short ribs with creamy polenta! Ha!

Love the muffin topped muffins! They look terrific, and I am on the same page as you with exercise. I feel it when I get out of my routine too, plus it lets me bake more without feeling TOO quilty. ;)

I share your gain (pain?) I run to knowing that I can eat all the good things we make. Yes, running could be boring and thinking about food always get you closer to the finish line.

looks like we share the same idea about running. running=dessert. I ran half the distance after trying these mufins since there was less sugar:) They look great!

Muffin tops on muffins are perfectly okay. :P For some reason when I exercise I don't think about food or baking. It seems to be the only time I don't think about food, which is funny because I exercise so I can eat.

Love your mini's. I would probably keel over with a heart attack if I started running now. Loved these muffins. . too much maybe? Packing on pounds that I have to work off! Oh well. . on to berry cake next week!

I go insane when I cant run as well. I had an injury a couple of years ago that meant I was off for 3 months and I was in tears with frustration a lot of it!

your muffins look way better than mine did - I think the cheese would have made a difference

I always watch the Food Network when I'm on the elliptical. And never watch it otherwise, really! The cheese would be amazing. I held myself back on that front. Love your minis as usual.

Sadly, I've never been fond of running. I'll walk all day long, but not run. =) The muffins look terrific. And I bet cheese would be a great addition.

I run to eat as well. Having just run a half marathon on Saturday followed by a full marathon on Sunday, I get whatever I want for the rest of the week. Now, it's off to the freezer for the last piece of that pear tart and maybe another corn muffin (I have already had four today, loaded with butter and honey!)Post-race week is great!

Wow there are a bunch of runners in this TWD bakers group. I'll bet Dorie didn't know she was encouraging fitness all the while helping all of us sharpen up our baking skills. Amazing! Your muffins look great and good luck on the 1/2. I run 2 to 3 times a week. We had 60 degree temps last Friday so I got to run on the trail on a springlike day in Jan. Today the high was 17 Go figure. Love the narration of your treadmill thoughts and entertainment. he he Its all about the rewards! Thanks for coming by for a visit

i too would be so upset if i wasn't able to run. i log about 22 miles every week, and it helps me focus and think clearly. that's so funny you think about food--when i run, i listen to the splendid table podcasts or kcrw's good food, so i know what you mean!

your corn muffins look lovely. i also went for the "muffin top" look--and bought a special pan just to get them!

I think it is still much healthier to run, even if it inspires you to bake, than it would be to not run and not bake. You've got a great system there! Your muffins look great -- everything is better with some cheese!

You may end up migrating to an elliptical, since knees seem to know when they've turned 40. They start protesting by making crunchy, creeky noises when you go down stairs, LOL. Or you may be one of the lucky ones.

Anyway, wow, would you look at those muffins? They're perfect!

If they're minis, does that mean you can eat twice as many? My soup was posted on Jan. 1. It's a favorite, and the muffins went especially well with it.

I really should exercise more. But I think being on a treadmill or elliptical gets boring after a while and when I get bored I tend not to do things. I bet working out with you would be fun though. Can you just imagine our conversations? We'd be talking about baking and food the whole time and then when we're done we'd eat the whole berry surprise cake. Hey, whatever gets you through the workout right? ;)
