
So here's the problem folks. As I hope she knows, I absolutely adore Jayne's blog. The kids, the cats, the... Okay, I'd use cookies for the alliteration, but truly, I love all the food on there too. Please don't strike me dead for not continuing the alliteration? So yes, love. Love love love. Lots of love here. But, umm... none of that love is going to coconut. Or shortbread. Or macadamia nuts. You see, I really don't like coconut. The flavor, the texture of that sugary shaved stuff you can get in bags - blech! And macadamia nuts? Well, they're just not my favorite nut. That'd be the pecan. I could eat those suckers by the handful. And do. And shortbread tiptoes a fine line. I really like the not too buttery kind, that's a little drier and perfect for dunking in tea.
No worries though here, because I did make the Coconut Butter Thins that Jayne chose for TWD this week. I just, well, quartered the recipe. And took them all into work. And handed them out via an email saying "It's Friday - Have a cookie!" Have I mentioned that my coworkers love cookies? And yes, I did try one. As in, I broke a corner off, tasted it, and realized that I really do like my shortbread with a bit less butter. The cookie, well, oozed butter as I bit into it. A bit too greasy, but that's just me. Everyone else who tried them loved them.
I must admit, I really actually liked the flavor of the cookies though. The coconut just made them a little chewy (I loves me some chewy cookies). And the macadamia nuts weren't too soft and buttery, although I'm still thinking almonds or pecans would get them more in my "like" column, for both the flavor and the crunch factor. The best part though? That amazing browned butter / cookie smell while I was baking them. *swoon*
Oh yeah, and the reaction of people as I told them they had to try a cookie before they could leave my office. Priceless, let me tell you!

These weren't my favorite cookie either. I'm not a fan of macadamia nuts so I just made them without nuts. I agree though - they did smell really good while they baked!
I loved them, but had to cut the recipe in half because my usual gineau pigs don't like nuts or coconut! :) Your cookies look yummy, though, and I'm glad your coworkers loved them!
my work loved them - although they seem to eat anything I bring in! Love the butterfly plates, what cute phots.

I made Candied Ginger shortbreads this week, drizzled with dark chocolate. Your cookies look wonderful, even if you didn't actually like them!
I love chewy cookies too! the coconut worked well in this recipe. Pity you didnt enjoy it that much. But at least the co-workers got the better of it!
The cookies did smell good, I'll admit that. I loved the cookies, not my favourites, my manager actually ate 3 in a row, so he must have liked them a lot!
They were definitely buttery. And the house did smell fabulous as they were baking. It was nice of you to share these cookies!
I'm thinking that this would probably be the best shortbread recipe with the addition of lime. I'm going to make them again without the nuts or coconut, too. Glad you tried them, though. Dorie would be proud.

Cookies are nice, but where did you get those plates? Gorgeous! Good for you for making them even though so many of the ingredients turn you off. I'm with you on pecans being #1. I toast them and then have them over cereal or oatmeal, or yogurt, or in a fruit salad. Sorry, this isn't about pecans, it's about coconut butter thins, and yours look great! Almost as nice as those plates!

I don't doubt that your coworkers were wowed by these cookies! It says something that you liked them as well, even though they are chock full 'o things that are not your favorites. I was completely shocked by how much I loved these. Yours look beautiful, as always.
I agree with you on the too-sweetened coconut. Whenever I spy bags of the unsweetened version, I stock up. It doesn't seem to make a big difference in taste, except the end result is less cloying. Too buttery? Hmmm

These were great! But I understand you not being too excited by the ingredients. I was the same way, but once I tasted them my mind was changed!

C. those look very tasty. They are addictive, to me, anyway. I used cashews and chai cause macs are not my favorite either.
A year or two ago, I would have agreed with you on all counts. But, I've started to like coconut quite a bit, and I'm slowly coming around to macadamia nuts. I'm still on the fence with shortbread, but I haven't given it an honest chance. But hey, at least the lack of eggs makes it easy to quarter the recipe!
I'm glad you liked the coconut in the end, and it's great that it makes them chewy. You'll have to experiment with some different nuts.

Held hostage at work by crazy baker-lady! "She wouldn't let us leave the building until we ate a cookie. It was traumatic and delicious all at the same time." says confounded office worker. Other employees in the building are concerned about next week's banana cream pie and fear there could be a clown outfit involved.

These were not my most favorite either. Although some of that could be contributed to the fact I cooked them in a too-hot oven.
I left town before I could get these made, but I am so going there soon as all those flavors are a hit for me! Yours look really good and nice and tasty...yep, so going there soon, after I get caught up from being gone...problem with going on break is that it is all still here waiting when you return and then more tacked on...and the laundry piles...OMW....LOL. Great job on the cookies.
