
I must admit, I'm even getting a little over my head with the dose of chocolate this month with Tuesdays with Dorie. So I can't even imagine how much Kayte is looking forward to a couple months full of fruity crumbles and cakes. I mean, when it comes to chocolate, my first response is yes please! But when you start throwing chocolate into bread puddings and mixing it with amaretti but no flour, I have a second response - enough!
Which is why I took creative liberties with this week's chocolate cream tart, chosen by Kim. Chocolate cream filling in a chocolate crust? Umm... I think that's the reason why I've had a tartelette shell of sweet tart dough sitting in my freezer for a couple months. No chocolate tart dough for me! And then, even with a bittersweet chocolate filling, I really needed to add something in there to brighten things up. Forgoing the whipped cream topping, I decided instead upon a sprinkling of grey salt.
Speaking of whipped cream topping, did anyone else find it odd that the chocolate cream filling in fact had no cream?!? It seems as if cream gets added to every single possible thing, except a recipe for a chocolate cream tart? I was a little confused by that, but I guess that's a good thing. Dorie keeps ya guessing!
As for the tart itself? My initial reactions were these - one, I could eat the filling by itself, and two, this is like a glorified pudding tart. With really fabulous pudding, but still.

Yes yes - a glorified pudding! But it was just so tasty on its own - who needs a crust?

The salt-chocolate combo sounds like a great partnership. I'll have to try that some day. I figure if I have filling left over, I'll just treat it like pudding.
Wonderful idea with the salt. I will be glad to get back to baking something other than chocolate myself. With a chocolate hating hubby, I had to skip most of this month's treats!

That looks gorgeous, never heard of grey salt? As for the word cream in the title, I'm assuming that's because the custard is called pastry cream? I loved this!
I keep seeing salt-topped-chocolate desserts but have not done so myself yet. I even have some of that salt!

Yum, I adore the whole sweet salty thing so I really wish I could've had a bite of that tart with the gray sea salt on top. I am right there with you on chocolate overload. I mean, I consider myself a major chocolate lover but I am on serious overload here. Your tart is a beautiful way to end the chocolate madness.
We haven't OD'd on chocolate yet around here, but that may be because I skipped the bread pudding. This was definitely fancy chocolate pudding in a crust, which made it very popular with my kiddos. =) I liked it with the whipped cream, mainly because it made for a nice contrast with all the chocolate.
I think you're right, it was just like pudding in a tart shell. Good pudding, though.

Well, maybe the cream refers to the whipped cream topping. SALT?? Wow...who would think of something like that? I will have to try that sometime and see what the guys think. I know that when we did the pepper on strawberries I was very skeptical, but that was really really good and now I do that often. Totally amazed you are getting a wee tired of chocolate weeks...I have to admit, the tart looks much better with the regular tart crust and not the chocolate one...just too dark and chocolatey with that chocolate crust, too. Love the minis, as always...when the boys leave home, I am so going with minis on things. As always...great job and I love those plates!

Hey, you know what you should do? You should make 4 pans of brownies. That seems to be my solution when I'm over-chocolated.
Except apparently I don't get over-chocolated, because I pretty much loved this tart. The salt sounds like a great addition though.
I definitely could've eaten the filling as pudding....in fact, I may have had a few too many licks off the spoon, if you know what I mean. ;-) I bet this was great with the regular tart crust - I came pretty close to trying it that way, but opted to try it as written. Next time, definitely!

I almost bailed on this one - in fact, the pudding is cooling as I type. It IS pudding. Very, very good pudding. But pudding nonetheless.

My mom used to make Chocolate Pudding Pie- jello pudding + store bought graham cracker crust. The best part was, and still is, licking the spatula. Love the grey salt idea.

Looks very good. The salt is such a different addition and it looks pretty darned good. Hang in there...chocolate is almost a memory. For now, anyway! :o)

Mmm...salt. Love salt with my chocolate desserts. Your little mini is too cute. I wish I had more interesting stuff tucked away in my freezer. It's mostly cryovac fish and gallons of chicken stock from channeling Ina Garten last weekend.

I loved the filling as a pudding by itself as well. one day when you are not so chocolated out, yuo should try it with the chocolate pastry - it was delicious!
I am glad that I tried it with a chocolate crust and it was good. However, I think that I would have enjoyed it more like yours.
Salt garnish! Oh, brilliant! I bet that was so fantastic. I doubled the salt in my chocolate crust, but really like the idea of sprinkling it on top. I think cream in the filling might have just pushed me over the edge. It was so rich with just milk that I guess it deserves the title of cream.
Your adaptations look great! Salt + chocolate is such a great pairing. I'm going to go out on a limb here and say that some time when you're just a wee bit tired of fruit and crumbles and such, come back to this recipe and make it with the choc crust and the whipped cream - pure synergy in my opinion - takes it out of ho hum pudding realm.

Fabulous tart you got there! I didn't get a chance to make it for this week (moving out + 24 hour power outage = no baking). That is interesting the filling had no cream.
I know what you mean by the chocolate overload. I think the salt would be a great way to cut through the sweetness.
