Very fun to read all of this from the conference. Sounds like you all had a great time. Your tart is very lovely. How did you get all those layers so precise? My ganache was soft at room temperature and oozed onto the caramel layer, but yours stayed so nice and perfectly clear! Wow.

That lunch sounds nasty. How can they do something like that? Maybe it was a joke? But agree this would have been worth smuggling in as a clearly superior substitute. So jealous there are all these lovely conferences in the US.
That is the cleanest, most perfect slice of anything I have ever seen. Anything with caramel is a winner in my book.
