TWD: Flaky Apple Turnovers


As I think I've mentioned before, I do most of my baking on the weekend. I pack it all in as tightly as I can, buzzing around my apartment like some hopped up crazy person. And let me just say - I totally need more medium sized bowls. Because when I need two for bread dough, one for melting chocolate over a double boiler, two to hold caramel, and another for a diced apple filling, things get a little crazy. I'm pretty sure that I washed the two middle-sized bowls in my nested set a total of 6-7 times on a four hour period.


Granted, I don't always pack things in that tightly. It's just that we had priorities. I had gotten up a little before the bf (totally unheard of, he wakes up at ungodly hours even for me!) and just puttered around for a few minutes. But then he walked in and decided that today was a raspberry picking day. Um, yes please! You see, we had sorta kinda maybe stayed quite a while at the bacon party the day before instead of going raspberry picking. Bacon... Raspberries... Bacon... Raspberries... Can you understand why we decided to do both this weekend? There's nothing better than hanging out with friends and saying "Oh, just one more BLT," or "Just one more piece of bacon - he just put out a different kind." Yes friends, my coworker made four different types of bacon. From the pig he received as a gift at last year's bacon party. I think that when he pulled out the peppercorn crusted bacon, I might have gone to heaven.


What does this have to do with the flaky apple turnovers that Julie picked for this week's TWD? Probably not much, except for one teeny weeny little shortcut I took on the recipe. I used puff pastry. Sshhh! I'm sorry, I just took a look at the pastry called for in the recipe and said - but I have puff pastry! And it has butter! Flaky flaky layers! Chop up some apple, make some turnovers, and rush rush rush out to pick raspberries! Priorities people, mkay?


So that's how I ended up with these little turnovers - four from 2/3 of a sheet of puff pastry. Half an apple, a handful of raisins, a bit of sugar, and some cinnamon and ground ginger. They became lunch, but I think the pound of raspberries we ate as an afternoon snack made up for the unhealthiness of the lunch, right? Either way, they were mighty tasty.

4 types of bacon - excellent! I would usually make apple turnovers with puff pastry, so this is a totally acceptable sub-in for me. They look good.

Puff pastry sounds like a great substitution! But, I will say that Dorie's dough might have tasted better. Because what's better than tons of butter? Tons of butter combined with sugar.

The pound of raspberries totally flushed it out!!! Those look awesome, and it is ok for the shortcut! You had a crazy weekend... bacon, raspberries, puff pastry, washing dishes!

Bacon...raspberries...I'd say the puff pastry sacrifice was worth it (esp since my crust didn't puff...oops!)

Bacon party- that is something my hubs would really get excited about. How do you even stage something like that? hmm
I don't really care if you used puff pastry-at least you did these! and they look great.

I have no shame in my love of puff pastry!!! Now I wonder how the bacon from the party you want to would taste like wrapped in puff pastry. YUM!!

Hey what ever works..I have used puff pastry before and Im not shy to say so!! I love your turnovers and Im happy you enjoyed them. I really loved this recipe and will make them again!

Sounds like a good plan to me. Love your little puffy turnovers. Raspberries and Bacon vs. Turnovers. You made the right choice.

But, I have to say, this pastry of Dorie's is really really really good. I should probably lose this recipe asap. Your little turnovers look so cute...love the dishes and linen.

Raspberries are definitely a priority. =) I thought about adding raisins to mine (as I always do with apple pie), but decided not to this time. And I can't say anything about your lunch, since I'm about to eat a turnover for dinner...

you can never have too many medium bowls or half sheet trays in my opinion! when i first saw the name of the recipe, i assumed it would use puff, and was a litle miffed about having to make a dough. i would love to eat a pound of just picked raspberries--so jealous!!

I can't tell you how loudly I laughed at the bacon party. First of all, that's something that only happens in the Midwest (where I was born and raised, so god bless it), and second of all, if my boyfriend had heard about it, we would have flown in.

I envy your weekend - bacon and raspberry picking?? Even more jealous that the bf suggested raspberry picking. I am going to drag my husband apple picking this weekend; he most certainly won't be a willing participant :)

I wish I'd just used puff pastry instead of fiddling with this dough. Perhaps then I'd have liked the turnovers more. Yours look perfectly puffed and delicious!

Let's see, bacon, apples, raspberries, butter, most of the major food groups. Sounds like a delicious day to me, and who cares if you used puff pastry? Now, back to the bacon. . . .

I can't tell you how tempted I was to use puff pastry, especially after I found how hard it was to get the dough rolled out. Yours look great!

Ahhh...I love anything apple with flaky dough! I'm making apple pie tomorrow. These turnovers make me wish that it IS already tomorrow!

Bacon party? Raspberries? Mmmmm...oh wait, your turnovers look awesome! I loved this dough, but I'll be honest - if I make the turnovers again, I'm totally using TJs puff pastry.
