TWD: Cran-Apple Crisp


Cranberries. If you're like 90% of the US population, your first thought is that jellied cranberry sauce that comes around on Thanksgiving. It schloops out of the can, and you can cut perfect rounds of it, using the ripples from the tin can as guides. And at the risk of alienating people, I love that jellied cranberry sauce. It's perfect for making sandwiches with - some turkey, a little stuffing, gravy, and a round of that sauce. Make it open faced, and it's a fork-and-knife reminder of how awesome Thanksgiving foods are.


But no worries - my taste buds have matured past that cranberry jelly. Now I crave cranberries in other forms - cakes, scones, muffins, chutneys, chunky sauces, and crisps. So when Em picked the cran-apple crisp, I nearly danced with joy. I did, in fact, immediately head to the stores to buy bags and bags of cranberries. Well, just two, but still! Lo and behold though, I ran out of time to make them the weekend the bf and I were at my apartment. Instead of carting the bags of cranberries, I figured I'd buy some when I got to Madison.

But... but... I couldn't find any! This is a disaster of epic proportions!! Not only could I not make the crisps, I couldn't make any other cranberry goodies I wanted to - the scones! the muffins! the quick breads! I was, to say the least, distraught. So I did what any reasonable person does in this situation - I hunted down a produce person and grilled them about the projected ship date of said cranberries. C'mon, Wisconsin is the largest producer of cranberries in the US - we should have cranberries!!!


So you can understand my sheepishness when he, um, pointed to a corner (very small! tucked away! darkly lit!) where there were bags of cranberries. I quickly got over my embarrassment (you have to, if things like this happen to you very often), grabbed two more bags of cranberries, and zipped back to the bf's apartment. Scant hours later, a cran-apple crisp was born. Angels rejoiced. And I was a very. very. happy person.


Disclaimer: I upped the cranberries by 50%, because I lurve them. I'd probably double them next time though, as cranberries are not better in moderation. Coconut wasn't getting anywhere near this crisp topping, so I doubled the amount of oats in it instead - no harm done. And, even though I might again be stoned for saying this, I'd probably halve the amount of crisp topping next time. I like topping with my apples, not vice versa.

Next Week: Sugar Topped Molasses Spice Cookies (second time around, and these are still drop-dead tasty - MAKE THEM)

Ha! You are a cranberry hoarder! I love it. I did the same thing the first time I saw the bags of fresh cranberries in the store. Grabbed as many bags as I could and tried to look unsuspicious.
I should have upped the cranberries in this too, I think they were perfect for making the filling not too sweet.

The joy of this recipe is use can alter the hell out of it to suit your own taste and it always comes out awesome! Go on with your bad self!

Shhh - I am hoarding a very large bag of cranberries in my freezer right now....... You can't be too careful.

I had to giggle at your story. That is something that I have done so many times.

Please don't through cranberries at me, but I didn't use them in mine.

I went a totally different way.

Looks very good, and I applaud the doubling up of the cranberries both in purchase and in crisp! I had no trouble finding fresh, but I could not find dried cranberries...there must have been a run on them, finally found them on the third try. No coconut? Really? Love coconut. How about in a Mounds bar, do you eat it then? Mark's favorite candy bar, btw.

WOW!! Good thing there isn't a cranberry shortage. You would have really been up a creek - physically, mentally, kitchenly.

Your crisp looks terrific. Did you use only fresh cranberries? I love cranberries too and think I'll add extra as well. My most favorite is homemade cranberry sauce because it is so easy to make and smells delicious. I also love how the little cranberries pop when they are cooking. Great post.

Kayte - Oh my, I had a friend whose favorite candy was a Mounds bar. I tried it once - Yecchhh! No thank you, no coconut for me, at least not fibrous dried coconut. Coconut milk curries are YUM though.

Kim - Yes, I only used fresh cranberries. The bf doesn't like cranberries, so I didn't want to buy more cranberry - related things while there :)

I heart cranberries too. All forms, though I don't like chopping fresh cranberries. Glad you found the cranberries. I'm sure they were hidden away and you had to say the secret phrase before you found them in the store. :p

I love cranberries too, even the sauce from the can! :) That said, I thought the cranberries added a bit too much tartness to the crisp so I'll definitely add ice cream next time. Your crisps looks marvelous!

I feel the same way about cranberries as you do: I love them in all ways, shapes, and forms. Sophisticated . . . and not so sophisticated. And that sandwich you talked about -- I love it!
So, needless to say, I'm delighted that you were able to get your hands on the cranberries! Your crisp looks amazing.

That canned cranberry gloop also makes a really delish white cake filling (albeit a soft one) when mixed about 1:1 with buttercream.

Ahem, anyway, I agree, this was a fantastic crisp. I liked how the cranberries gave it such a nice color too. Yours looks wonderful.

You had to up the cranberries in this dessert after all that heartache and effort to buy the things! That jellied cranberry has always had a place in my pantry. On Valentine's Day, I sliced it then cut each slice into a heart shape for my daughters for dinner. Love this crisp too (next time sneak some of the dried cranberries in - they really made it even better.

I've been having a hard time finding cranberries around here. So I had to use some old ones that were in my freezer, but the crisp was still very good. I finally tracked down some fresh cranberries yesterday, but there still weren't very many bags. What's up with that? Thanksgiving is only two weeks away! The ones I bought are indeed from WI, though. Didn't know they're the largest producer.

Yeah...there was a lot of topping, but it was tasty. Oh, and I love the canned cran-sauce, too. Pretty pictures!
