TWD: Chocolate Volcano Cookies


You know, there are just times when you shouldn't put off writing a post. I made these, oh, two weeks ago. It was the very same day I made the spice sables and some chocolate chip cookies, come to think of it! The fiance was a very happy cookie eater for the next week thanks to all of those... But getting back to why I shouldn't wait to write posts. It's not normally a problem, but occasionally I look back at things I've made and go - man, I could use one of those right now. Or two, or three. Okay, maybe a handful - it's the holidays, damnit!


Even worse, I totally didn't have faith in these cookies. No offense to Macduff (never any offense, she's one awesomely hilarious gal), but um... these looked a bit suspect. Egg white, sugar, nuts, and espresso powder? That can't make a cookie. Especially not with the random step of heating the batter on the stove before portioning the cookies out. These were going to be flops, flops I tell you!


Except they weren't. Even with my brazen substitution of two tablespoons of cocoa powder for the scant teaspoon of espresso powder (I halved the recipe). They were chewy, nutty, crispy, and chocolatey. We won't go into how, once they came out of the oven, I made the fiance try them first to see if they were any good. Nope, not going into that at all.Total faith here, people, total faith. So here I am, reliving my surprise, and you know what? I just want a cookie. A nutty, chocolatey, chewy, crispy cookie. My kingdom, my kingdom for a cookie!

Maybe the cocoa powder was the secret? The world may never know.

I know exactly what you mean, except that my second batch of these cookies are all packed up for my friend, and all I want to do is open up the package and just sneak out one...or two. I've baked two different versions, but the next one will be cocoa - yum!!

They look wonderful, and I think that sub sounds like a great idea as well. The guys inhaled these, not even time for a photo of the taste tester this month...gone in a flash. High praise enough I would say.

I too was so sure these weren't going to work I stuck them in the dining room. The dining room, where unloved baked goods wait to be taken to work. How I regretted giving them away once I tasted them.

I also stole your cocoa idea -- and thank you very much! I loved the chocolate flavored cookies waaaay more than I think I'd have liked the espresso version. I like coffee but something about the espresso powder in these cookies just threw me off. I'm glad you liked these -- maybe you'll have an excuse to make them soon to assuage your craving?

I didn't love these, but I suspect I would have had a different reaction if I had used cocoa powder. Yours look so wonderful and volcano-y!

Yep, these were surprising all right. The chocoalte sub sounds perfect. Wish I'd have tried that.

Lol! Total faith here! I really liked these and have made them twice; the first time exactly like the recipe is written, this last time I used cocoa powder, hazelnuts and pecans. Yummy!

Okay, now I'm really wishing that I'd made these. Guess I'll have to add them to the list for when I have a little more time. I like the idea of adding cocoa, too.

Haha I had the same thought process as you on these, except mine actually did flop! The more blogs I visit though, the more it becomes clear I was in the minority this week. Your substitution of cocoa powder sounds good, if only I liked nuts :)

My thoughts were the same as yours-how could this cookie work-but they did and they are delicious and easy. I wanted to freeze mine for the holidays, but they were devoured within hours!
