TWD: White Chocolate Rhubarb Brownies


There's no way around this. I've been debating for the past month and a half how I would explain the results of Marthe's pick this week - white chocolate brownies. But, well, I can't even use rustic, or homemade, or any other adjective for these but one - ugly. Okay, two. Underbaked. You see, I baked them before the pick was even announced, let alone before the storm of issues, problems, and solutions developed. So I knew early on how sweet they were (even with my substitution of rhubarb for the raspberries), and how the layer of meringue masked how underdone the brownies were after the required bake time mentioned in the recipe.


Which is why these, um, never got tasted. Never cut up. They oozed through the cooling rack, people! Brownies are not supposed to ooze! Certain things are supposed to, although ooze is not really a very pretty word. But they oozed. And since I was surrounded by two tarts, some ice cream, a bread pudding, and god knows how many other baked goods that had turned out quite a bit more successfully, I bailed. I bailed on a Dorie recipe. I don't think I've ever done it, but this is one recipe where the ingredients were just too much to try a re-do.


Here's the thing - that's what I love about this group. Good and bad, you have all these other bakers telling you that they, too, had underdone brownies. Gooey brownies. Oozy brownies, too sweet for their taste. Phew. I didn't screw up too badly, they just weren't to my taste. And that's okay, because others absolutely loved them. And some of the variations I've heard about? They sound absolutely fantastic. So good, I might actually try a re-do when I finally get into a kitchen with an oven. So check 'em out.

oh gosh. you're scaring some of us. I skipped the meringue topping for fear of a disaster like yours. It was alright in the end. Well.. better luck with nxt week's recipe then!

Sorry they didn't turn out for you! You win some you lose some I guess...the funny thing is, I was expecting to make a complete mess of this recipe and for some reason it worked!

I feel badly that what should have been such a good recipe was not. You are not alone though. Reading others' messages, the problems are common.

I skipped the meringue. Call me coward. It was much easier to make. I was also forewarned so I expected to leave them in longer.

I skipped the meringue and mine still went directly into the trash. White chocolate and raspberries too pricey for a redo of this one.

My cat has an infected bite, and she's been oozing for a few days. You're right, not a pretty word. :)

Actually, I don't think your brownies are ugly. But I know how frustrating it is when something comes out of the oven and drips through the cooling rack. The chocolate ameretti cake did that for me. I just used my finger to slurp up the drips though. Cuz that's the way I roll. Klass all the way.

I didn't add fruit to mine or meringue.

I also baked mine for an hour before the middle was cooked through.

Now that's an impressive fail--right through the rack? Lol. =) I only gave these one try, too, and I don't think I'll try again. I'm just putting them in the category of the Dimply Plum Cake (which I did try a couple times) of Dorie recipes that just aren't for me. =)

Meringue is so finicky - these DO look wondeful -the topping is nice and smooth (flat). Mine was a rolling disaster -such a strange recipe, but great fun to make! Nicely done!

If you bake this one again, you're a better "man" than I am! I'd feel sorry for the dinner party that I inflicted this recipe on, but I baked several other more acceptable bars also. This was one weird recipe...

That's what I love about this group too - everyone tries the same recipe, and everyone has a view or their own variation. And you often realise that you aren't alone. I am in your camp - mainly underdone brownies that were way too sweet for me. But hey, fun to try.

I love that you tried the brownies with rhubarb, I think it was a good choice and if I'd had any on hand I would have gone that route. Sorry they didn't turn out. Brownies are definitely NOT supposed to ooze so totally understandable that you bailed on this one in favor of other treats. You definitely weren't alone, seems there wasn't a lot of love for the brownies this week :)

Oh man, sad story! Subbing rhubarb seems like a genius move to try and cut the sweetness. I have to say that with everyone's drama, I'm kind of glad I didn't make them this week. Onward and upward!

Did you name it 'the blob?' Please tell me you did!! I didn't have the WAY underdone issue, but then again I completely skipped the meringue.

I'd say that your brownies look great anyhow... but you'd probably just send me hate mail ;)

I wish you would have been able to taste these. Rhubarb sounds like a great match. Oozing is pretty sad. My first batch was underdone, but still structurally sound.

Yep, problems here as well, and I was so looking forward to these! Mine were not done in the middle, fell apart from pan to cutting board, the meringue caved in, but you know what...the swim guys ate them anyway, with a spoon! Not a bit left and declared them "Good Enough." LOL. Sometimes it's a bust, but if you have teen boys and their friends around, chances are that it will get eaten anyway.

I've never made this recipe, and have to admit, never noticed it in Dorie's book. But probably not a surprise as I'm so not a fan of white chocolate - usually avoid anything in it.

What a shame that this brownie recipe seemed to have some flaws. But I suppose, sometimes you shouldn't fiddle with what's already perfect - chewy chocolate brownies. YUMMMM!
